Entrepreneur with good taste explains how he mixes toxin-free food with an ethical dining concept to change the way we eat

Erik Oberholtzer, a co-founder of Tender Greens, was the keynote speaker at a recent meeting of METal International, hosted by METal founders Ken Rutkowski and Maya Ross.

The celebrated chef, whose business was in 2014 named by Forbes as one of America’s most promising companies, used the event as a platform to explain to entrepreneurs how he and two friends, Matt Lyman and David Dressler, developed a business plan for a casual dining concept that focused on wholesome food and affordability as well as helping the disadvantaged.

With 25 restaurants now under their belt across California, their business has grown into a leading program that not only dishes up good food - it assists ‘at risk’ young people and helps them develop new skills with the Tender Greens Sustainable Life Project. The 6-month culinary internship program for former foster youth founded by Oberholtzer has been hailed a major success, with many of the young people forging great careers as a result of structured culinary training and education about the food chain.

During his speech, Mr Oberholtzer talked about how people identify with food and how the connection can often be disjointed, with fast food on one hand and wholesome food on the other. He explained his vision for the Future of Food, pointing out he wants to see everyone have access to good food, real food and whole food.

Mr Oberholtzer is proud to have co-founded the P. Balistreri Salumi Company, a chef legacy company incubated and brought to market through Tender Greens.

He studied Psychology at Temple University in Pennsylvania before progressing to Culinary Arts at Johnson & Wales in Providence, Rhode Island. He now sits on the boards of Sustainable Economic Enterprises of Los Angeles (SEE-LA), which oversees seven farmers’ markets in the Los Angeles area, and Everytable, a storefront concept that makes healthy, chef-made meals and prices them according to the neighborhoods they serve.

Tender Greens is set to expand next year to New York and Boston.
