An Italian fine dining eatery in Durham, North Carolina, the Convivio Wine Bar and Restaurant, has launched a new menu featuring speciality black truffle dishes. Executive Chef Paolo Gavazza, and Restaurateur, Somelier, Chef and Master Butcher Guiseppe Cagnoni, have launched a range of new dishes featuring black winter truffles that are prepared fresh off the plane from Italy.

Convivio is located at the City Hall Plaza in Durham. The restaurant has a warm and earthy Italian feel with a large serving table built by Paolo and Guiseppe. Natural, organic and bio-dynamic wines are also on offer from the cellar which is managed by in-house sommelier Guiseppe.
The winter menu features a range of antipasti, pasta, carne, pesce and contorni. Three special dishes featuring Black Winter Truffles are on offer, with Chef Paolo Organic Eggs, or with house made noodles and Reggiano sauce, or served with Hanger Steak, potato mash and red wine sauce.
With the launch of these special black truffle dishes, restaurant patrons can expect an authentic Italian culinary experience. Paolo Gavazza is the Executive Chef, Consultant, Chef Instructor and Alumni of Alma – the most prestigious culinary school in Italy. Paolo has worked for a Michelin Star restaurant in Rome and Emilia Romana Ristorante Paolo Teverini.
Guiseppe Cagnoni comes from an Italian family who has have been in the restaurant business for three generations. Guiseppe has been a restauranteur for over 25 years in the USA and he has owned restaurants in Miami and San Francisco before settling in Durham.
Convivio also run cooking classes and special events, such as weddings, at the restaurant, and they may be contacted for reservations, which is recommended due to the popularity of this intimate Italian restaurant and bar.
