Spicy Flavors Local Foods Dining Among Restaurant Trends for 2015

Several recent reports have identified many of the popular dining trends expected for 2015. Some have already been embraced by many restaurants.

The restaurant market is one of the most competitive industries. Every year there are new trends to watch for as companies try to position themselves as leaders, and 2015 is no different. With a third of the year in the rearview mirror, many of these predictions have started to come true.

“‘I want what I want, when I want it’ will be the theme of the food-and-beverage world in 2015,” said Andrew Freeman, owner of an eponymously named business located in San Francisco. This marks the eighth year his report has been released and embraced by such industry heavyweights as the National Restaurant News. He called this year’s theme “The Pleasure Principal” indicating a belief that casual fine dining will be driven by guests looking for an indulgent and informative dining experience.

One trend that seems to be more of a growing movement is the use of hot and flavorful spices.

“Restaurants are not afraid to bring the heat,” Freeman said. Citing an earlier report from the editors at Restaurant Hospitality, he pointed out that “Sriracha is the go-to sauce for Millennials.” Millennials are expected to be one of the most important demographics for casual dining, but one Appleton, Wisconsin restaurant is already prepared for them.

“Since we opened three years ago, we have noticed a large portion of clientele have been members of the millennial generation,” said Kim Finnell, one of three owners of Osorio’s Latin Fusion restaurant. “As they grow up, they are looking for something different from the ubiquitous cookie-cutter national chain restaurants that were seemingly interchangeable. They appreciate the different menu, and they certainly appreciate the spicy flavors.”

Finnell said that most of the spice and heat that comes from the Latin fusion kitchen of Executive Chef Liborio Osorio does not come from a bottle, but rather the traditional spices that his family has been cooking with for generations. While the names and flavors may be exotic to most people, the way Chef Libo includes them in his signature menu items bring the flavors of each dish together.

Another trend that Osorio’s Latin Fusion is also ahead of the curve on is the “loco-vore movement.” Kate Taylor, staff writer for Entrepreneur, writes, “The love for local food means rising customer interest in everything from house-purified water to regional seafood to locally manufactured products like beers and liquors." Unlike national chains that struggle to convince their customers of their sustainability when it comes to food, a privately owned restaurant can easily show how they work and shop locally.

Finnell is quick to point out that just because some of what they do is trending, they did not open the restaurant to be trendy.

“This was a concept that we dreamed about from the beginning, and the way the locals have embraced us, we’re sure to be here long after new trends have been predicted,” Finnell stated.

Featuring Latin and International cuisine, Osorio's Latin Fusion offers casual fine dining with a flair for the creative. Many recipes come from Osorio's family book, while many of the more progressive dishes have been created in the kitchen of the restaurant itself.
